Apple Prune Oatmeal Bars


Ingredients:


Filling:
¼ cup sugar
1 cup water
1 pc peeled red apple, sliced
1 pc peeled green apple, slice
1 cup chopped prunes
½ tsp cinnamon
1/8 tsp nutmeg

Crust:
1 ¾ cup all purpose flour
½ tsp baking soda
¼ tsp salt
½ cup butter
1/3 cup mashed banana
2 cups NESVITA Oatmeal
¾ cup firmly packed brown sugar



Procedure:

  1. In a saucepan, combine all filling ingredients; mix well. Bring to a boil.  Reduce heat to low; cook about 10 minutes or until thickened, stirring occasionally.  Cool slightly.
  2. Preheat oven to 375°F.  Grease and flour a 13 x 9 inch pan.  
  3. In a large bowl, combine flour, baking soda and salt; mix well.  With pastry blender or fork, cut in butter and banana until mixture resembles coarse crumbs. Add oats and brown sugar; mix well.
  4. Press half of the crumb mixture evenly in the prepared rectangular pan.  Spread evenly with filling. Sprinkle with remaining crumb mixture; press lightly.
  5. Bake at 375°F for 20 – 30 minutes or until golden brown.  Cool 1 hour or until completely cooled.  Cut into bars.
