Turkey Ham, Cranberry, and Arugula Tea Sandwiches



These dainty sandwiches are a wonderful combination of sweet and salty, tangy and nutty.


Serves 20 to 24  
Prep Time 15 to 20 minutes



Ingredients:

1/4 cup cream cheese

1/4 cup mayonnaise 
40 slices white or wheat
bread, crusts removed
about 280 grams turkey 
ham, sliced
1 bunch arugula
1 (14-ounce) can cranberry jelly



Procedure:

 Soften cream cheese in microwave then mix with mayonnaise to make a cream cheese-mayo spread.


 Lay bread slices on a clean, flat surface. Spread a thin layer of the cream cheese-mayo mixture on each slice. 

3  Pat turkey ham dry and place 1 slice each on top of half the bread slices. Add a layer of arugula.

4  Spread a layer of cranberry jelly on the remaining bread slices. Place slices on top of arugula and lightly press to seal sandwiches.

 Trim crusts to form squares. Cut into assorted shapes: diagonally to form 4 triangles, lengthwise to make 3 rectangles or use a cookie cutter to make circles.
